For many craft businesses, their own sourdoughs and soft wheat doughs are the character-giving ingredients of their bakery products. We have developed the compact Petit Levain small fermenter in four sizes to enable controlled and multi-stage ripening. With volumes of 80, 150, 300 and 500 liters respectively, it offers many users the right size for daily production.
