W&K-Automation Newsletter August 2026 – Our Rework Concept

What Do We Mean by Rework at W&K?

Rework refers to reusing bread that is no longer offered for sale. For bakeries, this is an everyday issue: customers expect well-stocked shelves with the freshest possible baked goods at any time of day. At the same time, overproduction causes avoidable costs and increases food waste.
This presents bakeries with a number of challenges:

  • Should you deliberately produce more so that enough products are available at all times?
  • How can rising energy and raw material costs be managed economically?
  • Is flexible logistics the right solution – even if it means additional costs?
  • And most importantly: how can food waste be reduced sustainably?

The W&K Solution

Drawing on our many years of experience in processing leftover bread, we have developed two high-performance rework systems: the UR 300 and the UR 600. The UR 300 is designed for approx. 300 liters of bread slurry, while the UR 600 processes up to 600 liters.

Depending on your requirements, our systems are available in different versions:

  • as a stand-alone solution,
  • for integration into existing weighing systems, or
  • as a fully automated system including infeed.

How the Rework System Works
Operation is simple and efficient:

  • Single-variety leftover bread is loaded into the container.
  • Optionally, the bread can be toasted beforehand to create additional roasted aromas and a more intense flavor.
  • A high-performance cutting blade chops the bread directly in the container.
  • Water is dosed automatically according to the preset recipe. A ratio of 10 kg of bread to up to 25 liters of water has proven effective.
  • The finished bread slurry is then dosed precisely via integrated load cells or an existing scale.

More Freshness, More Flavor, Less Waste

Adding as little as 5% bread slurry, based on the amount of flour, improves freshness retention and gives baked goods a more intense flavor profile. Our practical trials also show that the doughs become more supple and are particularly easy to process.

In addition to these quality benefits, the system stands out for its easy operation. It requires very little labor, so it can be run efficiently with minimal time investment.
